The Sorachi Ace hop is a distinctive Japanese variety originally developed by Sapporo Breweries in the 1980s. Bred from Brewer’s Gold, Saaz, and Beikei No.2, Sorachi Ace hops offer a truly unique aroma profile that sets them apart from other hops. Today, they are grown primarily in the United States and used by brewers worldwide for their bold and unusual character.
Sorachi Ace hops are known for their intense lemon and dill aroma, often accompanied by herbal and coconut-like undertones. With alpha acids typically ranging from 10% to 12%, they serve well as both a bittering and aroma hop. Their clean bitterness and expressive aroma make them ideal for saisons, IPAs, and experimental styles.
When used in dry hopping, Sorachi Ace hops bring out their full citrus and herbal complexity. Brewers often describe the aroma as lemon zest with a touch of lemongrass and coriander. These qualities make Sorachi Ace hops a great choice for beers that aim to surprise and delight.
Brewers choose Sorachi Ace hops for their ability to stand out in a crowded hop market. Their unique flavor profile adds depth and intrigue to recipes, especially when paired with more traditional varieties. They work well in single-hop beers, allowing their bold character to take center stage.
In the field, Sorachi Ace hops are known for their moderate yields and reliable performance. Grown in regions like Washington State, they benefit from ideal conditions and careful cultivation. This ensures consistent quality and availability for brewers seeking something different.
Wild Raven by Thornbridge Brewing
Wild Raven is Thornbridge Brewing’s legendary Black IPA, first brewed back in 2009. Complex and full of surprises, they use a blend of American and New Zealand hops including Centennial and Nelson Sauvin, creating a piney, fruity hop character to balance the main hop addition of Sorachi Ace, which gives Wild Raven its unique lemony, coconut-esque aroma. This Black IPA pours a deep mahogany in colour with a creamy tan head.
