Hop Variety Description

A Noble hop, Saaz originates in Czechia and has developed over many years in the Zatec area. Classically applied as an aroma hop in European lager beer, Saaz has found a home in a wide variety of beer styles. Saaz hops are a low yielding variety, a lot of work has been carried out over the years in an attempt to improve the yield. This has been achieved through clone selection as it was feared that hybridisation would result in a loss of the traditional aroma characteristics. Until recently all research was aimed at improving the hops this way, however some hybridisation has occurred in recent years to improve the susceptibility to Downy Mildew, Powdery Mildew and Verticillium Wilt.

More Information About Saaz Hop Variety

The Noble Hop Saaz

The Saaz hop is one of the world’s most iconic and time-honoured hop varieties. Grown in the Žatec region of the Czech Republic, Saaz is classified as a noble hop. It has been used in brewing for centuries, particularly in Czech pilsners and lagers. Revered for its low bitterness and refined aroma, the Saaz hop remains a favourite among traditional and modern brewers alike.

Aroma and Flavour Profile of Saaz Hops

Saaz hops are known for their delicate, herbal, earthy, and floral aromas. Their low alpha acid content—usually around 2% to 5% making them ideal for aroma rather than strong bitterness. Saaz hops provide aromas of Spice, Floral and Herbal on the rub and flavours of spice, floral and woody within the brew. In fact, Saaz’s subtle profile enhances lighter beer styles without overpowering. Moreover, they offer a soft spiciness that contributes to the crisp finish in classic pilsners.

Brewing with Saaz Hops

Brewers often use the Saaz hops in traditional lagers and sessionable beers. It performs best in late boil additions, whirlpool stages, or as a dry hop for aroma. While Saaz is subtle, it builds complexity when layered in multiple stages. Additionally, it pairs beautifully with other noble hops such as Hallertau or Tettnang. This allows brewers to craft nuanced, balanced beers with timeless appeal.

Why Saaz Hops Are Still in Demand

Despite the explosion of bold, new-world hops, Saaz hops continue to hold their ground. Their smooth character makes them perfect for beer drinkers who prefer balance over intensity. Furthermore, many heritage beers still rely on Saaz to maintain authenticity. From craft breweries to global brands, the demand remains strong.

In conclusion, the Saaz hop offers heritage, balance, and elegance. Whether used in a classic Czech pilsner or a modern hybrid style, it consistently delivers. For brewers seeking subtlety and tradition, Saaz hops are truly unmatched.
