Brewers first crafted this ale along the West Coast of the United States, creating the style that set the standard.
Hops in the beer recipe
Cascade hops are used within the bittering process, while Amarillo® is used for flavour and a 50/50 split of Simcoe® and Crystal for aroma
Amarillo® brings flavours of citrus, stone fruit and tropical, while the Simcoe® and Crystal bring aromas of grape fruit and tangerine.

Indian Pale Ale
The classic British version of the IPA often had an original gravity of 1.070 or higher, but American Indian Pale Ale versions usually come in slightly lighter. Moreover, New World IPAs feature aggressive hopping, often delivering bold bitterness from citrusy or resinous—sometimes even catty—Pacific Northwest hop varieties. In fact, the rise of American IPA-suitable hop varieties has fueled the growing dominance of IPAs in the American craft beer sector. As a result, many New World beer bars and brewpubs dedicate half their tap lines to different IPA substyles.
