When brewers talk hops, it’s usually the big, colourful, descriptive stuff that takes centre stage. Tropical aromas, juicy dry-hopping, bold varietals from New Zealand or the US, and new releases from our programme. But behind all that aroma is a quiet force that does the heavy lifting: alpha acids.

What Are Alpha Acids?
Alpha acids are the primary source of bitterness in beer. Found in the lupulin glands of the hop cone, they are isomerised during the boil, transforming into compounds that contribute bitterness and help balance the sweetness of the malt.
There are several types of alpha acids—mainly humulone, cohumulone, and adhumulone, each contributing slightly differently to the final beer. The total alpha acid percentage tells you how much bittering potential you’ve got to work with.
Why Alpha Acids Matter
Bitterness might not always be the star of the show these days (especially in a world of hazy, juicy styles), but it’s still fundamental to balance. Whether you’re brewing a crisp West Coast IPA or a clean pilsner, bitterness is what prevents beer from tasting cloying or flat.
Understanding alpha acid content helps you:
